1 medium butternut squash (about 2 pounds)



2 tablespoons coconut oil, plus more for the pan

1 tablespoon coconut sugar

1/2 teaspoon ground cinnamon, plus more for garnish

1/2 teaspoon fine sea salt

1/4 teaspoon freshly ground black pepper



Coarse sea salt, for garnish

DIRECTIONS

Preheat the oven to 375°F and grease a rimmed baking sheet.

Peel the squash and slice it in half lengthwise. Remove the seeds and cut into 1-inch cubes (you should have about 6 cups).

In a large bowl, combine the melted oil, coconut sugar, cinnamon, salt, and pepper.
